It's finally here. After all the testing, tasting, and quiet days spent waiting for dough to prove, Cresta Seoul is open.
If you've been watching the site slowly come together over these past few weeks, thank you for your patience. There were a lot of small things to get right before we felt ready to say it out loud: the fermentation times, the flour, the packaging, even the little details on this website. None of it happened overnight, and honestly, some days it didn't feel like it was happening at all.
But it did. And today feels like the right day to say so.
Cresta Seoul started from something pretty simple — a love for real sourdough, made slowly and honestly. Every loaf here is naturally leavened and fermented for over 26 hours, with select flour and nothing that needs a long ingredient list to explain. Alongside the sourdough, we bake a small, rotating lineup of Belgian chocolate cookies, madeleines, and seasonal treats — including gluten-free options for the days you want something a little different.
The ones closest to our heart, though, are the pieces that carry a bit of Korea in them — black sesame, Jeju matcha — flavors we grew up on, folded into a French pastry tradition. That mix is really what Cresta Seoul is about.
Everything is handcrafted in small batches, which means some weeks look a little different from others, and some things sell out. That's not a flaw in the plan — it's the plan. We'd rather bake less and bake it right.
For now, pickup is every Tuesday from 1–2 PM at Newport Hills Woodlawn Park, and orders go live through the site ahead of each date. If you're nearby in the Bellevue–Redmond area, we'd genuinely love to have you try a loaf.
This is just the beginning, and there's a lot we still want to build — more flavors, more consistency, more of the little touches that make this feel like ours. But we didn't want to wait for "perfect" any longer. We wanted to start.
Thank you for being here from day one. More to come — see you at pickup.
